Recipe: Boniatos con Naranja
(Sweet Potatoes with Orange Sauce)

This recipe is taken from a Woolworth composition book where Mariana M. Prats wrote down her recipes.

5 pounds of sweet potatoes (or 3 18-oz cans)
½ cup butter
1 small can (6 oz) frozen orange juice concentrate
Rounds cut from an orange


Peel and cut the sweet potatoes into ½ inch pieces. Spread in a single layer in an oven-safe casserole.  Heat the butter and orange juice over moderate heat. Stir to mix. Pour over sweet potato pieces. Bake until golden brown. Garnish with orange rounds.

This was added in pencil: If the casserole dish is not large enough, bake half [of  the sweet potatoes], then add the other half and return to oven.

My guess, since the sweet potatoes are supposed to bake until golden brown (hasta que se doren), is that it should be baked in a hot oven.
